01A note from the kitchen

Heritage food, set down lightly.

We cook the food of the Madhya Pradesh table and the broader Mughlai north — the dishes our grandmothers cooked for theirs. The recipes are old. The ingredients come from the road outside: vegetables from the Sanchi market, spice ground in Bhopal, milk from a village twelve kilometres south.

The kitchen is small and visible from the dining room. We have a working clay tandoor, a single charcoal grill, and three cooks who have been with us since we opened. We do not hurry, and we do not pretend.
